Siciliana Sauce Recipe, and Why We Had Fish So Often

Tuesday, 30 and Wednesday 31 March. We had Veal Parmesan which was a great success. Trenna only ever put this on the menu if she was sure she could get genuine veal, not just any beef. Then one of us would bash it mercilessly (the steak, not the poor baby cow). It was a yummy dish.

Trenna would have ensured that we had red meat that night, as my work diary confirms that I had given blood earlier that day.

On the second night we had “homemade bread”. When I read that I didn’t bat an eyelid, but then I remembered that we didn’t buy our bread maker machine until a few years after this, so Trenna probably did the whole loaf in the traditional way, with a final bake in a bread tin in the oven.

Thursday 1, Friday 2 April and three other times that month. Pan fried fish and each time it was “Delish” or “Yummy”. It’s a meal I hardly ever do now, in fact I can’t remember the last time. But thinking about it now I recall that there was a good fish monger/shop right next to the supermarket where we would do our Thursday night shopping, at the Park Centre in Victoria Park..

It was very convenient, very fresh, there were never any bones in the fillets, and in 1993 it was a fairly inexpensive form of protein. I miss it now.

Tuesday 6 and Wednesday 7 April. Spaghetti Bolognese – “Balisimo!” I’m sure it would have taken Trenna hours to cook. I sometimes shudder to think what Trenna would think when I see recipes with names like “Cheat’s Bolognese”!

Monday 12 and Tuesday 13 April. Tacos, which were tasty. I’m sure most people who have tacos for dinner do it because it is quick and easy – which it is. But, here is Trenna thinking about how she can add her own seasonings and make her own sauces! Just in case you aren’t thinking about it… noone had the “World Wide Web” in their home at that stage, and it would be another 5 and a half years before Google was created.

Monday 19 and Tuesday 20 April. Tri Vegaroni Spirali with Siciliana Sauce, Garlic Bread, Fetta Salad is described as truely mouth watering. I will paste below, her iPad version of Siciliana from much later than 1993. A lot of the work can be done ahead of time and it is very likely that she commandeered me on Sunday to do some of the prep (especially as we didn’t cook an evening meal on that particular Sunday).

Friday 30 April and Saturday 1 May. I had an RDO (Rostered Day Off) on the Friday, so I am sure I did the roast beef. Trenna always loved a roast.
